Quick and Easy Pecan Pie Bars


Do you ever have those nights when you've got a craving? You want something quick and easy. Something that will hit the spot with minimal effort. Something satisfying. You'll go for different and new as long as it's vaguely familiar. I mean, how disappointing would it be if you tried something for the first time and it let you down. Right?

Well, I tagged this recipe a while ago....

What? 

Omg!!! Seriously you guys?....what else on earth would I have been talking about?? 

(clears throat) Back to the recipe.....I absolutely love pecan pie. But I save it for those holidays. I'm afraid if I ate it all year around, it wouldn't be special anymore.....and then I wouldn't love it anymore and and and....then what? How horrible to not have a favorite pie, right?

So I saw these bars (mine look way different than the ones I saw) and I knew I had to try them. Oh...you wanna know where I saw them? Over at Brown Eyed Baker and she calls them Chunky Pecan Pie Bars.

They were yummy...and disappeared in no time...and they hit the spot. Chocolate, nuts, sweet, sticky, easy, quick...etc etc......you get the idea.

Now tell me to shut up and hand over the recipe already..

1 1/2 cups A.P. Flour
1/2 cup softened butter
1/4 cup brown sugar, packed of course
3 eggs
3/4 cup corn syrup
3/4 cup sugar
2 tablespoon melted butter
1 teaspoon vanilla extract
1 3/4 cups chocolate chips
1 1/2 cups chopped pecans

Preheat your oven to 350' F and grease a 13 x 9 casserole dish (actually, parchment paper works wonderfully well too)

Mix together the flour, 1/2 cup softened butter and brown sugar


Press the flour mixture into the bottom of your casserole dish and bake for about 15 minutes or until lightly browned.

While thats baking, whisk together the eggs, corn syrup, sugar, melted butter and vanilla. Stir in the pecans and chocolate and pour into the casserole pan, once the "crust" is finished cooking.


Bake for about 30 minutes or until set. Let cool completely, in the pan before cutting into bars


It's like eating little mini sized pecan pies only it's got chocolate in them!!! And us women know how important chocolate is when we're having a craving....for that special something.

  2. For the record, my mind wasn't going anywhere it shouldn't have on your intro ;) Funny though!

    Glad you loved these, you can have them, I'm allergic to pecans and walnuts. Which is probably why I don't do desserts much, most of them have walnuts and pecans.

  8. I bookmarked these too...and still haven't made them yet. I'm kind of scared of them. Because I think I will lose all self control around them. but when a craving hits...a girls gotta have what a girl's gotta have. If you know what I mean :P
