Green Bean Salad - The Perfect Summer Side

Another great recipe from my grandmother. Simple, colorful and it has that sweet and sour appeal that so many of us love. It's kinda like pickled veggies. Its perfect for BBQs, picnics and potlucks. Check it out...

Ok...before I give you a list of the ingredients...pretend there's a bottle of oil in that picture. God....what is wrong with me? Im always forgetting ONE thing in my ingredient pictures. I feel like I should do a "where's Waldo" theme with my ingredients

1 small onion, diced
1 - 2 stalks of celery, diced
1 small bell pepper, diced (what ever color you prefer)
1 can french green beans, drained
1 can peas, drained
1 jar pimentos, drained
1 can kidney beans, drained
1 tablespoon salt
1/2 tsp paprika
1 1/2 cups sugar
1 cup vinegar
1 cup oil

Mix up your veggies....

Then add the remaining ingredients and mix them all up

Look at that great color!!! I know...canned veggies are blah! But add all that sugar and vinegar, and that'll make just about anything taste good! hahaha

Ok...so cover this baby up and let it sit in the fridge for 2 - 3 days....letting all those flavors come together and really get pickled. (meanwhile, I'm getting pickled on a glass of Merlot hahaha).

Keep refrigerated. Use a slotted spoon to serve.

I made this for part of my 4th of July menu. We're having some friends over for food, drinks, and swimming. I think I'm going to keep the menu simple...mostly cold salads that can be pre-made, so that I can spend as much time with my friends as I can. As much as I love to cook....a girl has to have some time to partaaaaaay!!

    This salad looks incredible and I bet marinating it for a couple of days so brings out all the delicious flavors. Gorgeous contrast of colors too.
